I made this easy Lemon Icebox Pie for an end-of-summer fish fry as we gathered to send one of my granddaughters off to school. We needed a refreshing dessert to follow the fried catfish and hush puppies, and this cool, creamy pie fit the occasion beautifully.

This recipe is based on my family’s favorite key lime pie, but I replaced the lime juice and zest with fresh lemons. The filling starts with sweetened condensed milk and egg yolks, so it’s wonderfully rich and creamy. Plenty of fresh lemon zest keeps the flavor bright and unmistakably lemony.

This pie was created for more than an ordinary family dinner. Summer was winding down, one of my granddaughters was getting ready to leave for school, and we were gathering for a final summertime meal together.

A family fish fry called for something cool and citrusy for dessert. Fried foods are rich and filling, so a tart lemon pie provides a lovely contrast.

The same is true for barbecue, grilled meats, and spicy Tex-Mex meals. This creamy lemon icebox pie is light enough to feel refreshing but rich enough to make the meal feel complete.

  • 1 can (14 ounces) sweetened condensed milk

Fresh and Bottled Lemon Juice

I used three fresh lemons for this recipe.

The juice from those three lemons came a couple of tablespoons short of the required ½ cup, so I added enough bottled lemon juice to reach the full amount.

The zest of two lemons went directly into the filling. I reserved the zest from the third lemon to sprinkle over the whipped-cream rosettes.

This combination worked well because the fresh juice and zest provided bright, natural lemon flavor, while the bottled juice conveniently made up the small difference.

Why Use a Premade Graham Cracker Crust?

I considered making a homemade graham cracker crust in one of my pretty pie dishes. However, the lemon filling isn’t especially voluminous. In a larger pie plate, the filling can spread out and look shallow.

The slightly smaller premade crust gives the pie a fuller, taller appearance. It also makes the recipe easier and eliminates another baking step.

You can bake the premade crust safely in its original foil pan. Just remember to place it on a sturdy cookie sheet before adding the filling.

How to Make Easy Lemon Icebox Pie

Preheat the oven to 350°F.

Remove the plastic lid from the premade graham cracker crust. Leave the crust in its foil pan and place it on a cookie sheet. This supports the lightweight pan and makes the pie much easier to move in and out of the oven.

Zest and Juice three fresh lemons. Set the zest aside. Measure out the lemon juice. Add enough bottled lemon juice, if needed, to equal ½ cup total.

Place four egg yolks in a medium mixing bowl. Whisk the yolks until they are smooth and evenly blended. Add the lemon juice, zest of two lemons, and a pinch of salt. Add the sweetened condensed milk and whisk until completely combined.

Whisk until the filling is smooth. It should begin to thicken slightly as the lemon juice combines with the sweetened condensed milk.

Smooth the top and carefully transfer the cookie sheet to the preheated oven.

Bake for approximately 15–18 minutes, or until the edges are set and the center has only a slight jiggle.

Remove the pie from the oven and place it on a wire rack. Allow the pie to cool completely at room temperature.

Cover and refrigerate for at least four hours. Overnight chilling will produce the firmest, cleanest slices.

    Make the Whipped-Cream Topping

    Place the cold heavy whipping cream in a chilled mixing bowl. Beat until the cream begins to thicken. Add the powdered sugar and optional vanilla. Continue beating until medium-to-stiff peaks form.

    Transfer the whipped cream to a piping bag fitted with a large star tip. Pipe whipped-cream rosettes over the thoroughly chilled pie.

    Sprinkle the reserved zest from the third lemon over the whipped cream.

    Keep the pie refrigerated until serving.
