These Texas Sheet-Cake Skillet Brownies combine everything Texans treasure — deep chocolate flavor, a gooey center, crackly edges, and that famous warm chocolate icing poured right over the top.

Baked in cast iron for a rustic backyard feel, this dessert works beautifully in the oven or on the grill. It’s simple, rich, and big on Southern charm — perfect for Christmas gatherings, cookouts, or any night you want a decadent chocolate fix.

Most everyone in our extended family would consider themselves Texans “through and through.” And here in the Lone Star State we know our BBQ, our rodeos, and our Texas Sheet Cake.

Ordinarily, this cake is baked on a cookie sheet with a warm loose (nutty!) frosting poured over. I wanted to make something similar, but in a cast iron skillet.

Let me say up front that this recipe will work in the oven or on the grill, so I’ve included both options for you. I’ll also tell you up front that the version I made was more of a cake-like brownie. If you like a gooey/chewy brownie you’ll want to see the note near the end of this post where I explain how to end up with that option.

No matter which version you make (and whether you bake it indoors on smoke it on the grill) you’re going to flip over this simple dessert.

As always, we’ve placed a full printable recipe card at the bottom of this post for you. Let me just say that this is a simple recipe and I’m sorry I didn’t think of it sooner! Here in Texas we love all-things-chocolate and hope you do, too!

For the Brownies

• ½ cup unsalted butter (1 stick), melted
• ½ cup vegetable oil (or melted butter for extra richness)
• 1 cup granulated sugar
• ½ cup brown sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup all-purpose flour
• ½ cup unsweetened cocoa powder
• ½ teaspoon baking powder
• ½ teaspoon salt
• ½ cup buttermilk (or milk + 1 teaspoon vinegar)
• ¾–1 cup chopped pecans (optional but VERY Texas)

Warm Texas Sheet-Cake Icing

As my mother-in-law is prone to say, “My stars and garters!” This is good. So, so, so, so good. And simple to make. You won’t need many ingredients for this delicious icing, trust me.

(Just like the classic! Pour it on WARM.)
• ½ cup butter (1 stick)
• 3 tablespoons cocoa powder
• ¼ cup milk
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• ½–1 cup chopped pecans (optional but encouraged)

How to Make Texas Sheet Cake Brownies (Oven Method)

Baking (in the oven or on the grill) is pretty simple with these brownies. They come together in a jiffy. Here’s how you’re going to do it:

Preheat oven to 350°F. Lightly grease a 10–12 inch cast-iron skillet with a neutral oil that won’t flavor the brownies.

In a large bowl, whisk together melted butter, oil, granulated sugar, and brown sugar.

Add eggs and vanilla, mixing until smooth and glossy.

Add flour, cocoa powder, baking powder, and salt. Stir until just combined.

Stir in buttermilk. Batter should be smoothe and silky.

Fold in pecans if using.

Spread batter into the cast-iron skillet.

Bake for 25 – 30 minutes, depending on how fudgy you want them. The edges should be set, and the center slightly soft.

While brownies bake, make the icing (recipe below).

Remove skillet from the oven and immediately pour warm icing over the hot brownies.

Let the glaze set for 10–15 minutes before serving warm.

Grill Instructions

If you want a more rustic, smokey flavor, you’ll want to do this on the grill. Here’s how you’re going to do it:

  1. Preheat grill to 350–375°F.
  2. Prepare skillet as above and place it over indirect heat to avoid burning the bottom.
  3. Close grill lid and bake 15–25 minutes, rotating once.
  4. Pour warm icing over brownies as soon as they come off the grill.
  5. Let the glaze settle before cutting.

This creates incredible smoky edges and a campfire feel.

How to Make the Warm Texas Sheet-Cake Icing

In a medium saucepan, melt the butter over medium heat.

Whisk in cocoa powder and milk. Heat until steaming but not boiling.

Remove from heat and whisk in powdered sugar and vanilla until smooth.

Stir in pecans (optional).

Pour over hot brownies immediately — this is the magic.

How to Store Texas Sheet-Cake Skillet Brownies

Let your brownies cool completely before covering the skillet with plastic wrap or transferring leftovers to an airtight container.

  • Room Temperature: Keeps well for up to 3 days.
  • Refrigerator: Store up to 5–6 days; warm slightly before serving to revive that gooey texture.
  • Freezer: Wrap individual squares in plastic wrap, then foil. Store up to 2 months. Thaw at room temperature and warm in the microwave (or oven) before serving.

Tip: If you poured the icing on while warm (like a true Texas sheet cake), it will set beautifully on top — just don’t stack the pieces until it’s fully cooled.

What to Expect from this Dessert

If you love chocolate on chocolate you’re gonna want to bake up a batch of these right away! As I mentioned above, this version is more cake-like, but you can check out the note below to get a heavier consistency. (What can I say? I’m a fan of Texas sheet cake!)

The smooth taste of the chocoolate, the crunch of the pecans, the warmth of the brownie? It all comes together to produce a dessert so rich, so flavorful, that I can’t wait to make it again and again. This time I baked it in the oven. Next time? On the grill, for sure!

You can serve this with a scoop of ice cream, if you like. (Sure wish I’d had some on hand!) But you can also skip the ice cream and just eat it warm in the fall and winter months. It’s going to be perfect on your Thanksgiving table or served up after your Christmas meal.

No matter when you serve it, you’ll be glad you did, and so will your family and guests!

How to Adjust for a Fudgier “Brownie” Result

Try one (or a combination) of these options if you want a fudgy brownie instead of cake-like texture:

  1. Reduce buttermilk to ¼ cup instead of ½ cup.
  2. Add ½ cup melted chocolate chips to the wet ingredients before mixing in the dry.
  3. Bake at 350°F for 22–25 minutes—just until the center is barely set.

You’ll end up with something thicker, fudgier, and closer to a brownie while still keeping that Texas sheet-cake glaze you loved.

Tips & Variations

• Add a pinch of cinnamon for old-school Texas sheet cake vibes.
• Swap pecans for walnuts or leave them out entirely.
• Add mini chocolate chips to the batter for extra richness.
• Serve warm with vanilla ice cream or whipped cream.
• For a true Texas twist, add a splash of strong coffee to the icing. (This is often my suggestion to enhance the coffee flavor.)
