Easy Cheesy Baked Tortellini with Homemade Meat Sauce
This easy baked tortellini layers cheese-filled pasta, rich homemade meat sauce, mozzarella, and Parmesan for a simple, hearty family dinner.

Sometimes the best recipes happen because you already have something wonderful simmering on the stove.
I had just made a big batch of my Homemade Slow-Simmered Meat Sauce, loaded with tomatoes, onion, garlic, Italian seasoning, and tender pieces of beef. The sauce had cooked for hours, the beef was beautifully tender, and the onion had practically melted right into the tomatoes.

Then I remembered the bag of cheese tortellini in my freezer.
Well. Dinner practically made itself.
I layered the tortellini with plenty of that rich homemade sauce and a mixture of mozzarella and Parmesan, then baked the whole thing until it was hot, bubbly, and cheesy.
And then I gave almost the entire casserole away. 😂
My granddaughters didn't have dinner plans, and they already love my homemade pasta sauce, so this one headed straight to their house. Fortunately, I made myself a small portion so I could actually taste what I'd made!
This is a terrific recipe for busy families, taking dinner to someone you love, or using a batch of homemade pasta sauce you've tucked into the freezer.

This casserole gives you some of the cozy appeal of lasagna without nearly as much work.
There's no ricotta filling to mix, no lasagna noodles to wrestle with, and no complicated assembly. The cheese is already tucked inside the tortellini!
Even better, you can use homemade sauce or a good-quality prepared pasta sauce. If you've already got homemade meat sauce in the freezer, this becomes an incredibly easy dinner.
Ingredients

Here's what you'll need:
- 1 package refrigerated or frozen cheese tortellini
- 3–4 cups meat sauce
- 2 cups shredded mozzarella cheese
- ¾ cup shredded Parmesan cheese
About the Sauce

I used approximately 3½ cups of my Homemade Slow-Simmered Meat Sauce.
You don't have to be terribly precise here. If you like a very saucy casserole, use closer to four cups. I wouldn't skimp on it because the tortellini will soak up some of that wonderful sauce as everything bakes together.
And while homemade sauce makes this particularly special, you can absolutely substitute your favorite hearty jarred pasta sauce.
How to Make Cheesy Baked Tortellini
1. Preheat the oven
Preheat your oven to 350°F. Lightly grease a 7x11-inch casserole dish if necessary.


2. Prepare the tortellini
Cook the tortellini according to the package directions. Mine only needed about 3 minutes, so this step went very quickly.
Drain well. Tip: Don't overcook the tortellini. It's going into the oven afterward, so you want it just tender.
3. Mix the cheeses

Combine the shredded mozzarella and Parmesan in a bowl.
You'll use approximately half of the cheese mixture inside the casserole and the rest over the top.
4. Build the first layer




Spread a layer of meat sauce across the bottom of the casserole dish.
Add approximately half of the cooked tortellini.
Spoon another layer of sauce over the pasta.
Sprinkle with approximately half of the cheese mixture.
5. Add the second layer




Add the remaining tortellini.
Cover generously with the remaining meat sauce.
Finish with the remaining mozzarella-Parmesan mixture.
There's no need to make these layers mathematically perfect. Just make sure you've got sauce and cheese distributed throughout the casserole.
6. Bake

Bake at 350°F for about 25–30 minutes, or until the sauce is bubbling around the edges and the cheese is completely melted.
If you'd like more browning on top, you can place it under the broiler very briefly at the end. Keep a close eye on it.
Let the casserole rest for about 5–10 minutes before serving.
Slice and Enjoy!

If you wait until it cools you should be able to easily serve this--in a bowl or on a plate.
Variations
There are plenty of ways to change this one up:
- Italian sausage: Use a meat sauce made with browned Italian sausage.
- Ground beef: Substitute a traditional ground-beef pasta sauce.
- Four-cheese tortellini: An easy way to make the casserole even cheesier.
- Spinach tortellini: Great with a traditional marinara.
- Extra mozzarella: Add another handful to the top if your philosophy is that casseroles can never have too much cheese.
- Spicy version: Add crushed red pepper flakes to the sauce.
- Vegetarian version: Use marinara instead of meat sauce and add sautéed mushrooms, spinach, or zucchini.
Make It Ahead
This is an excellent make-ahead casserole. Assemble everything in the baking dish, cover tightly, and refrigerate until you're ready to bake it.
Because a refrigerated casserole will be cold all the way through, allow a little extra baking time. I would plan on approximately 35–40 minutes at 350°F, checking to make sure it's piping hot in the center.
Storage
Store leftover baked tortellini in an airtight container in the refrigerator for 3–4 days.
Individual portions can be reheated in the microwave, or you can cover the casserole and warm it in a 325°F oven until heated through.
What to Serve with Baked Tortellini
You don't need much because this is already a hearty meal. Garlic bread, focaccia, a simple green salad, or roasted vegetables would all work beautifully.
And don't forget something for soaking up that extra homemade sauce left on the plate!
