  • 1 (15 oz) can mandarin oranges, drained — reserve the juice
  • 1 cup granulated sugar
  • ½ cup water
  • Reserved mandarin orange juice (usually about ⅔ cup)
  • ½ cup mini marshmallows
  • ½ cup chopped pecans (or walnuts; see variations)

How to Make Cranberry Mandarin Orange Salad

Make sure your berries are rinsed and ready to go!

1. Start the Syrup Base

Place ½ cup water and the reserved mandarin orange juice (about ⅔ cup) into a heavy saucepan.
Bring to a gentle simmer over medium heat.

2. Add the Cranberries

Stir in the fresh cranberries and 1 cup sugar.
Simmer for 10 minutes, stirring occasionally, until the berries soften and some burst.
(This gives the salad that classic cranberry texture.)

3. Add the Oranges

Remove from heat and gently fold in the mandarin oranges.
Let the mixture cool completely.
Overnight in the fridge works beautifully, but even 20–30 minutes is fine in a pinch.

4. Finish It Off

Right before serving, fold in the mini marshmallows and pecans.
