That’s pretty much how this Creamy High-Protein Beef and Zucchini Pasta came to be. I made it up one night using ingredients I had on hand: lean ground beef, fresh zucchini, purple onion, cottage cheese, and heavy cream.
I wasn’t even sure what to call it! The first time I tasted it, I thought it reminded me a little bit of beef stroganoff. It’s creamy, savory, and loaded with ground beef, but the zucchini, cottage cheese, and mozzarella take it in a completely different direction.
Whatever you want to call it, it’s so, so good! The vegetables are tender but still have a slight crispness to them, the sauce is creamy and cheesy, and the beef makes this a filling meal the whole family can enjoy.
A Hearty High-Protein Pasta Dinner

We used high-protein bow tie pasta in this recipe, which added even more protein to an already hearty meal.
Between the lean ground beef, cottage cheese, and high-protein pasta, this is one filling dinner. Zach immediately pointed out that it would be a great hearty meal before or after a workout.
You can absolutely use regular bow tie pasta if that’s what you have on hand. The recipe will work the same way.
What Does This Beef and Zucchini Pasta Taste Like?
The closest comparison I can come up with is beef stroganoff—but only loosely.
This pasta has that same creamy, savory comfort-food quality, but there are no mushrooms or sour cream. Instead, cottage cheese and heavy cream come together to make the creamy sauce.
The zucchini and purple onion add flavor and texture. I especially love that the vegetables aren’t cooked to mush. They’re tender but still have a little bit of crispness.
Top the finished pasta with shredded mozzarella and you’ve got a creamy, cheesy bowl of comfort food.
Ingredients for Creamy Beef and Zucchini Pasta

- 12 ounces bow tie pasta
- 1 ½ pounds lean ground beef
- 1 cup chopped zucchini

- 1 cup cottage cheese

Note: I used high-protein bow tie pasta, but regular farfalle pasta will work just fine.
How to Make Creamy Beef and Zucchini Pasta
Step One: Cook the Pasta

Cook the bow tie pasta according to the package directions. Drain well and set aside.
Step Two: Brown the Ground Beef

Place the lean ground beef in a large skillet or pan over medium heat and begin to brown it.
I used lean ground beef and did not drain the meat after cooking.
Step Three: Prep and Add the Vegetables




When the ground beef is approximately halfway cooked, add the chopped zucchini and purple onion.
Continue cooking until the ground beef is completely browned and the vegetables have started to soften.
I like the zucchini and onion to be tender but still have a slight crispness to them.
Step Four: Make the Creamy Sauce




Add the cottage cheese, heavy cream, garlic powder, salt, and black pepper directly to the beef and vegetable mixture.
Stir well until everything is combined and heated through.
Taste and add more salt, pepper, or garlic powder if needed.
Step Five: Add the Pasta


Pour the creamy beef and zucchini mixture over the cooked bow tie pasta.
Mix well until the pasta is completely coated in the creamy sauce.
Serve and Enjoy!


Serve warm and top each bowl with shredded mozzarella cheese.
Variations and Additions
There are plenty of ways you could change up this easy pasta dinner. Use regular pasta in place of high-protein pasta, swap the bow ties for penne or rotini, or add mushrooms if you want to lean a little more into that stroganoff-like flavor.
You could also use shredded Parmesan in place of the mozzarella or add a pinch of red pepper flakes for a little heat.
