  • 2 cans (15 oz each) whole kernel corn, drained
  • 2 packages (8 oz each) frozen corn — or substitute fresh corn in its place!
  • ½ stick (4 Tbsp) butter, sliced
  • 8 oz whipped cream cheese (or block, softened)
  • 2–3 Tbsp honey (adjust to taste)
  • Salt and pepper, to taste

Note: Instead of frozen corn I used four ears of fresh corn that I picked up in the produce department at Aldi, and can I just say. . .I’ll be doing it this way from now on!

This is one of the simplest dishes you can serve as a side. Just put it into the crock pot and it cooks itself while you’re outside grilling up your favorite meat. Here’s how you’re going to do to it.

Add all ingredients to your slow cooker.

Stir to combine, making sure the butter and cream cheese are evenly distributed. It doesn’t have to be perfect, I promise. As it cooks it will all come together.

Cover and cook on LOW for 2–3 hours, stirring occasionally. Mine only took a couple of hours and it was perfect!

Store tightly covered in an airtight container in the refrigerator. It should stay good for 4-5 days. You can freeze it to eat later, if you like. I try not to keep things in the freezer more than a couple of months.
