For today’s twist, we’re turning it into jalapeño-cheddar rolls—cheesy, spicy, and perfect alongside grilled fare (like any of our meats or sides), or a steamy bowl of soup.

Around here, we believe every great piece of meat deserves a great piece of bread. And while most folks know me for my brisket, ribs, and anything I can throw on a smoker, what many don’t realize is this: I’m obsessed with sourdough.

Yup—between trimming briskets and firing up the smoker, you’ll often find me in the kitchen feeding my starter like it’s a beloved family pet. Why? Because a truly good roll can hold up to pulled pork, mop up BBQ sauce like a champ, and still taste amazing on its own.

These Same-Day Jalapeño Cheddar Sourdough Rolls are quickly becoming one of my go-tos for busy grilling days when the smoker’s already rolling and I want homemade bread without the overnight wait. Soft, flavorful, and just spicy enough to keep things interesting—these rolls were made to sit beside smoked meats, not politely behind them.

What is Sourdough Starter?

If you haven’t used starter before, you’ll need to study up on it. We’ve been keeping starter on hand for the past several months and it has come in handy for a bunch of different recipes. (We’ll list several at the bottom of this post.)

People think that starter is hard to make. It’s not. It just takes patience. You’ll need at least 7-10 days if you don’t have a starter ready to go. But, honestly? Sourdough baking is so popular right now that you probably have at least one friend who would be willing to share with you.

Can I Make this Recipe without Sourdough Starter?

Yes, and I’ve given full instructions for how to accomplish that farther down in this post. Read it carefully before you begin.

Jalapeno Cheddar Roll Ingredients

These are simple ingredients you might already have in your kitchen! But it you need to pick them up at your local store, you shouldn’t have any trouble finding them there, either.

  • 100 g active sourdough starter (½ cup)
  • 350 g water (1½ cups)
  • 1 teaspoon instant yeast
  • 500 g all-purpose or bread flour (about 4 cups, loosely measured)
  • 10 g salt (about 1¾ teaspoons)
  • 1 cup (approx) finely chopped (or shredded) cheddar cheese
  • 2 jalapeños, seeded and chopped (or adjust to your heat preference)
  • Optional: extra cheddar for topping, coarse salt or everything-bagel seasoning for finishing

How to Make Jalapeno Cheddar Sourdough Rolls

Prep your inclusions and set aside:

Chop the cheese into pea-sized pieces and cut the jalapenos up (finely chopped, no seeds)

Mix the Shaggy Dough

Combine the water, starter and yeast in a large bowl. Mix until the starter breaks down. Let sit 5 minutes.
Then add the flour and salt. Stir until the dough comes together into a shaggy, loose mass. (Trust me, you’ll wonder if it’s right!)

At this point I revert to my bowl scraper to bring it together instead of using my hands because it’s messy.) Cover and let rest in a warm spot for 30 minutes.

Incorporate Mix-Ins + Stretch & Folds

After 30 minutes, do three rounds of stretch & fold at 20-minute intervals:

Wet your hands, pull the dough up from one edge, fold it toward the center.

Rotate the bowl a quarter turn, repeat until you’ve stretched and folded the whole dough.

During the 2nd stretch & fold, gently fold in the shredded cheddar and chopped jalapeños so they’re evenly distributed.

After the third stretch & fold, let the dough rest 30 minutes.

Shape into Rolls

Turn the dough out onto a lightly floured surface. Gently deflate and shape into a rectangle.
Cut into 8–12 pieces (8 = larger rolls; 12 = medium).


Tuck each piece underneath itself to form smooth rounds, placing each roll seam-side down on a parchment-lined baking sheet (or greased cast-iron skillet) leaving space between.

Proof & Preheat

Cover loosely with a tea towel or plastic wrap. Let the rolls rise until puffy (about 50–75 % larger)—this may take 45-60 minutes depending on your room temperature. Meanwhile, preheat your oven to 400 °F (205 °C).

Bake

Just before baking, optionally sprinkle a bit of extra cheddar on top of each roll and/or coarse salt.
Bake until golden brown and firm to the touch. (See note below for bake times.) Remove from oven and transfer to a wire rack to cool slightly.

Note: If you’re baking them as separate rolls (not touching) they will probably need 18 – 22 minutes. However, if you’re putting them together (as I did) like pull-apart rolls, they will need longer. Count on at least 30-32 minutes. And you might need to tent the rolls with aluminum foil if the tops bake quicker than the insides.

Storage & Make-Ahead Notes

  • Store cooled rolls in an airtight container for up to 2 days at room temperature.
  • For longer storage, freeze cooled rolls in a zipper bag; reheat from frozen in a 350 °F (175 °C) oven for 10–12 minutes.
  • If you’d like a softer crust, wrap the warm rolls in a clean tea towel; for a crisp crust, let them cool uncovered on the rack.

It can be done, I promise! If you don’t have starter but want to make jalapeno cheddar dinner rolls, just follow the recipe above, but with these adjustments:

Remove:

  • 100g active sourdough starter

Add Instead:

  • 50g (¼ cup) additional water
  • 50g (⅓ cup) additional flour
  • Increase yeast to 2¼ teaspoons (1 packet)

  • 1 packet (2¼ tsp) instant yeast
